Will updating the AOE license key be service affecting? As in cause an outage at all?

Typically "no", no service issues. The AOE license key files (aoekey.txt and key.txt) are copied into the OPT/DORADO/OWAREAPPS/EMS_SUPPORT/KEYS directory. Once the keys are installed, the process is complete. There is no need to restart the server for the keys to take effect. Refer to the "AOE Installation Guide", "Manual Generation and Installation of AOE Keys" section.
Log out of AOE, log back in. At the upper right go to the ABOUT AOE > LICENSING window to check the new expiration dates in the updated key files. Refer to the "AOE User Guide", "About AOE/Licensing" section.
